I’ve been craving something different lately, and my EASY SLOW COOKER BEEF CURRY of dreams really hit the spot. This recipe, which I like to call FAKEAWAY BEEF CURRY of DREAMS, is a simple weeknight meal thats as light, healthy and low fat as it gets.

I start with 2 lbs of tender beef stew meat, cutting it into fun little cubes, and then i toss in a diced large onion along with garlic, ginger, and a mix of spices like curry powder, ground cumin and a pinch of chili powder for that extra kick. I even add can of diced tomatoes and a good dose of low sodium beef broth for a broth that just bubbles with flavor.

And then i throw in chopped carrots and cubed potatoes to round it out. Trust me, this slow cooker curry is a gamechanger, and you really have to try it!

This slow cooker beef curry is one of my favorite meals to make when im in a rush or just want something tasty without lots of fuss. you start out by putting about 2 lbs of beef stew meat, cut into 1-inch cubes, into your slow cooker and sprinke a little salt and pepper over it. Then add a large diced onion, 3 cloves of minced garlic, and 1 tbsp of grated fresh ginger along with 1 cup of chopped carrots. Next you toss in your spices: 2 tbsp curry powder, 1 tsp ground cumin, 1 tsp turmeric, and 1 tsp of chili powder (but you can change that if you like it hotter).

After that, you pour in a 14 oz can of diced tomatoes with all the juice and add 2 cups of low sodium beef broth to cover most of the ingredients. Stir in 1 cup of cubed potatoes evenly and mix everythin together so all the flavors blend well.

Cover the slow cooker and let it cook on low for 7 to 8 hours if you have time or on high for 4 to 5 hours if you need dinner fast. once it’s done, check the seasoning and adjust the salt and pepper if needed. serve it hot with rice or naan and enjoy a meal thats both comforting and healthy.
